Traceability and absolute transparency for the PDO pig production chain

Strong step forward with the new control system wanted by the Consortia for the protection of Prosciutto di Parma DOP and Prosciutto di San Daniele DOP

Transparency, identification and traceability throughout the production system of the denominations Prosciutto di San Daniele DOP and Prosciutto di Parma DOP thanks to the adoption of a fully computerized traceability system ( Italian Registry of Protected Chain) which represents the backbone of the new control plans active from 1 January 2020.

This is the important point of arrival achieved thanks to the Pig Supply Chain Report, the first report, published on a monthly basis, with the fundamental data of the designation of origin supply chain, created through the sharing of controlled, certain and reliable information from the birth phase of the pigs up to the approval of the legs.

A project realized thanks to the will of the protection consortia , the collaboration of all the operators and the associations that represent them and the cooperation and sharing of information between the certification bodies CSQA (for Parma Ham DOP) and IFCQ (for San Daniele Ham DOP).

A substantial result that makes public for the first time the complete information of the pig chain with Geographical Indication. An act of total transparency towards the consumer and the other stakeholders, the result of an important evolutionary process that began on 1 January 2020 with the approval of the new control plan approved by the Ministry of Agricultural, Food and Forestry Policies.

A system resulting from a rigorous selection and control process that involves over 3,913 recognized operators (farms and slaughterhouses) and can be summarized in these numbers concerning the first six months of 2020: 5,238,631 tattooed pigs , 3,636,825 compliant slaughtered pigs , for 5,326,060 thighs approved for the production of products based on flesh -based supply chains. Numbers that represent the size of the supply chain, the production trend , the fluctuations during the year, the availability of raw materials.

Numbers of great importance and relief for two great products of certified Made in Italy agri-food which is also told through a transparency operation of data never made available to the market until today.

The good health of a supply chain also derives from the trust between the operators who make it up and from the mutual awareness of working correctly for a common good. The new Italian Protected Supply Chain Registry is in fact able to ensure greater transparency and clarity in supply chain relationships. For us, it is another important step in the relaunch plan for our sector that began a year ago which, together with the changes to the Regulations and the new control plan, aims to further characterize Parma Ham and strengthen the fraud prevention system to guarantee consumers a safer product.

For Prosciutto di San Daniele, the PDO data is becoming increasingly more objective and transparent thanks to the adoption of the RIFT portal - Registro Italiano Filiera Tutelata - for keeping and recording all the numbers of the PDO supply chain, allowing operators to know the results of the control activity in real time. All this for a new awareness on the trend of the PDO supply chain and in perspective of the market.

The computerization of the protected pork supply chain was the basis of the reform of the control system of the DOP Prosciutto di San Daniele. The RIFT portal is an innovative tool to guarantee traceability, transparency and immediacy in the system acquisition of data from PDO operators, as well as being a support to the inspection activity. The RIFT allows the rapid monitoring of the DOP productions of the supply chain, for greater protection of the final consumer.
