Necessity becomes a virtue, or rather, agri-food excellence tout court: this is the secret of Bresaola della Valtellina PGI. Produced exclusively in the province of Sondrio according to rigorous specifications approved by the EU and certified by the Agri-food Quality Services Center (CSQA) , it is the fruit of a thousand-year-old culture, passed down from generation to generation, which values the absolute quality of the meat processed, regardless of its geographical origin.

The limited availability of Italian cattle, in fact, has always required producers of Bresaola della Valtellina PGI to source their cattle primarily from EU (France, Ireland, Austria, and Germany) and non-EU (Brazil, Paraguay, Uruguay, and Argentina) farms, rigorously selected to meet the strict standards imposed by the regulations.

After all, "what makes the difference in the production of Bresaola is undoubtedly the quality of the raw material but, above all, the transformation process it undergoes," explains Mario Moro, president of the Consortium for the Protection of Bresaola della Valtellina PGI. "It is here that tradition is renewed every day thanks to the environmental conditions, the artisanal know-how, and the passion of the people who produce it. It is a heritage we intend to protect and enhance as the beating heart of our identity and the future of our region."
