The Trentino PGI Carne Salada supply chain entrusts its controls to CSQA, the leading certification body in the sector in Italy with 82 Geographical Indications.

By decree of the Ministry of Agriculture, Food Sovereignty and Forestry, CSQA obtained authorization to carry out control and certification activities on Carne Salada del Trentino PGI , which officially entered the European Register of Geographical Indications in October 2025.

The first PGI certified products are now approaching their market launch. These products are a product of excellence strongly linked to the Trentino region and its gastronomic tradition. They are obtained from selected beef cured in brine with spices and aromatic herbs, in compliance with a specification that protects the product's distinctive characteristics: leanness , delicate aroma and balanced flavour .

A new Geographical Indication that strengthens the basket of quality supply chains of Trentino-Alto Adige, made up of 30 PDO and PGI agri-food and wine products, with a production value of over 1 billion euros and the involvement of over 20,000 operators (Ismea-Qualivita 2025 Report).

Among the most significant elements of the new control plan for Carne Salada del Trentino PGI, which will apply to producers, portioners, packagers, and pre-slicers, is the extended inspection of the entire supply chain: from the processing of beef cuts to the packaging of the finished product in all marketable forms, whether whole, sliced, or sliced.

This is an important step for the producers of the Consortium of Trentino Salumi Producers, the promoter of the PGI, which will boost the sector by promoting initiatives dedicated to raising awareness of the certified supply chain—in terms of labeling, promotion, and protection of the authentic product—among consumers, producers, restaurateurs, and retailers.

This will strengthen the regulatory framework governing the production of Trentino Carne Salada, ensuring compliance with the specifications and the correct identification of the product, to the benefit of producers and consumers. The value of the Geographical Indication does not belong to individuals, but constitutes a collective asset destined to generate positive impacts for the entire region ."

The PGI Carne Salada del Trentino confirms the value of the portfolio of PDO IGP products certified by CSQA , which currently includes 82 Geographical Indications : a figure that underlines the desire to support the development of quality agri-food supply chains, a symbol of Made in Italy and the vocation of the territories.
