"Parma Ham is one of the most representative products of our country's gastronomic tradition , made using only two ingredients, legs of pigs born and raised in Italy and sea salt. What makes it unique is undoubtedly its unmistakable flavor, characterized by the typical sweetness and the varied aromatic notes that develop during the long maturing process."
Regarding tariffs, how can they affect you?
" Exports play a very important role for our product , absorbing 38% of branded hams in 2024. The leadership in terms of exports is confirmed in the hands of the United States, where 800 thousand Parma hams went last year, approximately a third of the total export quota, for a turnover of 100 million euros. For this reason, the issue regarding duties is particularly worrying, as they could compromise the great work carried out on the PDO over the years, which has benefited all the parties involved. The hope is that diplomatic and negotiating negotiations will be able to clear the field of unfavorable trade tensions for everyone ."

How does the Consortium act on environmental issues and ESG policies?
"Our Consortium has always had a priority in its commitment to the environment. Among other things, I would like to highlight the study conducted in collaboration with the Experimental Station for the Food Preservation Industry in Parma, which identified more sustainable materials for pre-sliced packaging. We also recently concluded the ecological transition project, carried out with the Polytechnic University of Milan, Enersem and CSQA , which allowed us to calculate the environmental footprint of our companies, activate the Made Green in Italy national certification scheme for Parma Ham, and finally create software available to our producers to support them in optimising their sustainability performance."
