
Goose salami is good, but if it's PGI, it's even better! The PGI mark is back on goose salami.
Processing of the meat has now begun, and the first PGI-certified salami will be available at the end of the month, precisely when Mortara celebrates its signature product. "We have already received a visit from CSQA, the certifying body, and we are ready to welcome them again this week for sampling of the finished product," explains Franco Tolasi (pictured) , president of the Consortium . "We can announce that by the end of the month, the goose salami will once again have the PGI mark."
Processing began last week, and the consortium members also received a visit from inspectors from CSQA , the certifying company, who verified the percentages of meat used by the producers. The same inspectors from the certifying company also supervised the operations related to the slaughter of the geese, after, of course, having supervised the breeding of the animals.
CSQA returned to collaborate with the Consortium in the summer of 2022 and currently certifies, among others, the PDOs of Grano Padano, Prosciutto di Parma, Gorgonzola, Culatello di Zibello and Salame di Varzi, as well as the PGI brands of Bresaola di Valtellina, Ricciarelli di Siena, Panforte di Siena and Red Onion of Tropea.
