A rapidly evolving market that, despite rising production costs, continues to show signs of vitality. The bresaola sector remains among the most dynamic, demonstrating a remarkable ability to adapt to changing consumer tastes and the challenges of the agri-food supply chain, and reviving investment. It is within this context that Rigamonti, a Valtellina-based company and world leader in the bresaola sector, is pushing for innovation, with a turnover of €256 million in 2024 and a 40% share of Bresaola della Valtellina PGI .

The company led by CEO Claudio Palladi is focusing on a new, rapidly expanding segment: that of beef carpaccio, which has seen double-digit growth in recent years.

Rigamonti , which in 2017 was the first to promote the 100% Italian supply chain certified by the FDA and Coldiretti , is a direct demonstration of this. Today, it continues to invest in full traceability and independent certification. All foreign meat comes from selected farms directly inspected by the company, with on-site inspections and certification by the CSQA body.
