"It's hard work working in the mountains, but there's no shortage of satisfaction," certifies Luca De Carlo, president of the Senate Agriculture Commission , after learning the contents of the budget of the Tambre - Spert - Cansiglio plateau dairy and agritourism center . The shareholders' meeting took place the day before yesterday. "In 2024 we processed about 20 thousand quintals of milk," says president Mirko Breda, "one million 970 thousand liti, all organic mountain milk, 75% of which comes from the plateau while the rest comes from Alto Alpago.

So they are all farms above a thousand meters above sea level, all organically managed for over 30 years". But the most interesting data is another. "We sold the milk at 81 cents per liter", explains Breda.

A gratifying compensation. Organic milk in Italy is priced at around 65-67 cents . In Bavaria it is around 60 cents, in France 55 cents. «This result is also the result», explains Breda, «of the management of our agritourism, the Bar Bianco, which allows us a few cents of premium». About 50% of the milk is transformed into organic drinking milk, 15% into mozzarella and the remaining 35% is transformed into cheeses that are sold both at outlets and in large-scale distribution, both specialized organic, and in a couple of large-scale distribution centers, especially territorial and in the Triveneto area.
