The “Zampina di Sammichele di Bari / Zampina di Sammichele / Zampina Sammichelina” has officially obtained the recognition of Protected Geographical Indication, with its registration in the European Union register established by the European Commission Implementing Regulation (EU) 2026/1248.The new PGI brings to 23 the number of Apulian products recognized at the European level as PDO and PGI and recognizes the efforts of the Promotion Committee, supply chain operators, and local and regional institutions. This achievement strengthens the protection of a product deeply rooted in the history and gastronomic culture of Sammichele di Bari.
A specialty with an unmistakable recipe
Zampina di Sammichele di Bari PGI is a fresh sausage to be eaten cooked, made from a mixture of beef and lamb, grated mature cheese, peeled tomato fillet, pepper, salt, and basil, enclosed in a natural sheep casing.Its distinctive spiral shape, held together by a wooden or metal skewer, and the aromatic profile provided by the tomato, basil, and cheese make it an instantly recognizable specialty. The meat, after cooking, remains juicy and tender, retaining its characteristic red color and firm texture.
All production and packaging stages required by the specifications take place within the administrative boundaries of the Municipality of Sammichele di Bari.
The bond with the territory is demonstrated by a tradition consolidated over time , handed down by local butchers and become an integral part of the gastronomic identity and tourist attractiveness of the community.
