This was communicated by CSQA itself, a certification body that operates in the agricultural and food sector and currently deals with 81 controlled DOP, IGP, and TSG products.

Tuscan bread DOP is one of the representative products of a region that boasts 32 DOP and IGP products, with an economic value of €192 million generated by the work of 11,505 operators, according to the ISMEA – QUALIVITA 2024 report.

CSQA notes that the protection of this Italian agri-food asset is the responsibility of the Consortium for the Protection of Tuscan Bread DOP (PDO) , which has implemented numerous initiatives. One such initiative, for example, is the "PANEDOPBIO" project, which has fostered the development of solutions to prolong the freshness of this bread, encouraging its diffusion beyond Tuscany. These include elements such as UNIPI-certified sourdough starter, reserved for producer members, and selected flours and a long leavening process, which guarantee quality and a longer shelf life. With this in mind, the Consortium is considering modified atmosphere packaging as a future objective for expansion into markets beyond the region.
