The participation process initiated by the Municipal Administration in view of the PGI recognition of Capocollo di Martina Franca has begun with a large participation of butchers and operators in the local pork butcher's sector .
The first meeting , held on the afternoon of Monday, March 16 , featured representatives of the Temporary Association of Purpose PGI Capocollo di Martina Franca , the Martina Capocollo Producers Association , consisting of butchers and industry professionals from the geographical production area—Martina, Locorotondo, and Cisternino—as well as attorney Piermassimo Chirulli and Dr. Marco Gasparotto of CSQA Certificazioni srl, via video link. The meeting was coordinated by Francesco Aquaro, Councilor for Productive Activities.
During the discussion, the importance of networking among the various businesses was highlighted to continue a process that represents a new opportunity for the entire supply chain and has now reached its final stage.
